Inspector's notes

Observed spatulas near the egg cooking equipment with accumulation of food debris. Also observed serrated knives with visible food debris used to cut bagel sandwiches. Per PIC, the utensils used for the cooked eggs and knives are cleaned at the time of the day, and are not changed out at all. Also per PIC, the establishment does not have enough utensils to change out every 4 hours. PIC had employee wash, rinse, and sanitize the spatulas, and knives. Discussed cleaning frequency of food contact surfaces with the PIC. Food contact surfaces must be cleaned every 4 hours when in use and must be stored clean. Corrective Action: Corrected at time of inspection.
