Must certify and provide test certificate for testable backflow devices.-- Discussed repairing the hole in the wall near the mop sink and sealing the escutcheon plate for the hot water at the mop sink, and consumer advisory for ceviche. No violations noted at time of inspection.

Discussed cooling methods: Cooling in containers that are 4 inches or less, stirring routinely to help distribute the heat, cooling on a top shelf in fridge so it is close to the refrigeration unit, and keeping a cooling log to ensure that foods are cooled from 135 to 70 degrees Fahrenheit in 2 hours and from 70 to 41 degrees Fahrenheit or below in another 4 hours.
