Inspector's notes

Observed raw chicken, sliced cheese, diced tomatoes, sliced pastrami, raw beef patties, in the the cold holding drawers under the grill and in the prep table on the east side of the kitchen with internal temperatures between 45 and 55 degrees Fahrenheit. These items had only been in the prep table for about an hour prior to inspection and were moved to the walk in refrigerator to chill to 41 degrees Fahrenheit. Observed tuna that was in the same unit but was sitting on top at 76 degrees Fahrenheit and was discarded. TCS foods shall be held at 41 degrees Fahrenheit or below to prevent microbial growth. Corrective Action: Corrected at time of inspection.

Observed raw chicken breasts, raw chicken tenders, cooked ribs, sliced cheese in the drawers under the cook top with temperatures between 47 and 53 degrees Fahrenheit. Per PIC, these items had been in the drawer 3 and a half hours prior to inspection. PIC moved items to the meat walk in to try and cool to 41 degrees. Half an hour later, items were still 45 degrees F. PIC discarded items at the time of inspection. TCS foods shall be held cold at 41 degrees Fahrenheit or below to prevent microbial growth. Inspector's notes

Observed mechanical dishwasher with chlorine concentration of 0 ppm. PIC attempted to prime the machine without success. Quat dispenser for 3 compartment sink was also dispensing less than 150 ppm. PIC filled the 3 compartment sink with water and was able to pour sanitizer from the bottle to a final quat concentration of 300 ppm to sanitize the dishes after the warewashing machine. PIC also called the chemical company to have units serviced. Corrective Action: Corrected at time of inspection.
