Observed dishes in the mechanical dishwasher with chlorine concentration of 0 ppm. Bucket of concentrate appeared to have just been switched out. Discussed with PIC about priming the machine after switching the buckets to ensure no air is in the line. After priming the machine, final concentration was 50 ppm. Corrective Action: Corrected at time of inspection.

Observed employee extinguish customers cigar, take an order at the register, then proceed to fill glasses with ice to make a drink. Inspector had employee wash hands and remake cups of ice at the time of inspection. Hands shall be washed when switching tasks and before handling ready to eat foods, such as ice for drinks. Corrective Action: Corrected at time of inspection.
