Inspector's notes

Observed pizza sauce cooling in the walk-in cooler in a bucket at that was greater than 4 inches with a tight fitted lid with an internal temperature range of 52F-60F. Per employee, the pizza sauce was cooked, and cooling for less than 6 hours prior to inspection. All TCS foods cooling were uncovered to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed dishes in the mechanical dishwasher with chlorine concentration of 0 ppm. Per employee bottle ran out earlier and someone was going to be bringing some from another store. For sanitizing food conctact surfaces chlorine shall be between 50 and 100 ppm. Establishment had quat sanitizer at 300 ppm and moved the dishes to be sanitized there. Also discussed taking the concentrate bottle from the bar dishwasher to use in the kitchen if needed. Corrective Action: Corrected at time of inspection.
