Inspector's notes

Observed cooked vegetables in the walk-in without a date mark. Also observed cooked lasagna, and cooked breaded chicken with a prepare date of last month in the reach in cooler. Per cook, the cooked lasagna and cooked chicken were pulled from the freezer on 8/10 but staff did not put a new date on the items when the items were pulled. The cooked vegetables were prepared on Monday, and staff forgot to put a date mark on the product. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed sliced ham, sliced cheese, cut lettuce, cut tomatoes and mayo with an internal temperature range of 55F-57F located in the prep cooler near the stove top. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

It was discovered that while cleaning the unit, the a switch was switched to "normal" instead of "cool". Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection.
