Inspector's notes
Observed dish machine located in the kitchen with a concentration of 0ppm for chlorine. A new bottle was on the machine, and while priming it was discovered that a piece of mechanism with the tubing was damaged. PIC called maintenance to service the machine at time of inspection. Establishment will be utilizing the 3 compartment sink to wash, rinse, and sanitize dishes. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. When using chlorine as a sanitizer, it must have a concentration between 50-100 ppm for sanitizing food contact surfaces. Corrective Action: Corrected at time of inspection.

Observed cooked mushrooms with a prepared date of 8/17, several days pass the discard date stored in the reach-in one door cooler near the office. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Per employee and sticker, items were made two days and the day prior to inspection. PIC had employee discard items at the time of inspection. Discussed keeping a cooling log and changing cooling methods to ensure foods have cooled properly and that TCS foods are holding cold at 41 degrees Fahrenheit or below to prevent microbial growth. Observed macaroni and cheese sauce at 90 degrees Fahrenheit, marinara at 128 degrees F., and alfredo at 123 degrees F in the steam table. Strips of cooked, not crispy, bacon at 78 degrees F, and chopped soft bacon pieces at 80 degrees F. Sauces were reheated to 165 degrees Fahrenheit before going back into the steam table. Bacon strips were reheated to 165 degrees Fahrenheit and then placed in a pan on the griddle to hot hold. Bacon pieces were discarded. TCS foods shall be held hot at 135 degrees Fahrenheit or above to prevent microbial growth. If bacon is crisp and can hold form when held, then it can be held at room temperature.
