Observed employee remove gloves and place gloves into the trash can and compact the trash down with their hand and then grab clean gloves without washing their hands first. Instructed employee to remove gloves and wash their hands anytime they switch gloves or change tasks. Employee washed hands and grabbed clean gloves at time of inspection. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

Observed hand washing sink with pedal style knobs that are activated by the knee/leg that were difficult to operate. Discussed with person in charge to repair/replace worn out parts on the sink so that it is not so difficult to operate. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed employee behind the meat counter working with food. Employee then disposed of the gloves they were using and touched the soiled exterior of the trash can while doing so. The employee then grabbed new gloves without washing hands and began to work with the food again. The employee was notified and stopped what they were doing to properly wash their hands prior to going back to working with food. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Discussed with person in charge utilizing different trash cans that don't stay closed all the time so that trash can be deposited without having to touch the soiled lid each time. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed beef ribs, beef steak, and pork cutlets with internal temperatures as measured using a probe thermometer of 45°-50° F inside of the display case. Person in charge moved the meat to the walk-in cooler to rapidly chill to 41° F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
