Observed unlabeled cut and uncut pieces of Mexican cincho cheese wheels wrapped in clear plastic wrap for retail sale in standing 1-door cold holding unit. Person in charge (PIC) stated that a vendor brings them from California who brings them from Mexico. PIC could not provide an invoice or documents verifying that the cheese is from an approved source. Discussed with PIC that documents or an invoice is needed to verify product, and inspector will return the following week for a re-inspection to obtain documents. PIC will cease sale of cheese and will hold product until re-inspection. Re-inspection to occur in about 3 days.

Arrived at establishment and business was not operating. There was no sign on the door to indicate that business was closed, but front door was chained and locked. Inspector called the phone number on the permit and the phone rang without an option to leave a voicemail. Email sent to owner for further information on operating.
