Core-3-304.14, C: Wiping Cloths, Use Limitation Observed wiping bucket measuring with 500 PPM of quat sanitizing solution. Staff added water to the sanitizer wiping bucket and remeasured the Quat concentration, which was now within the recommended range.. Reeducated staff on the recommended range of use for Quat (150-400 PPM) and discussed toxicity concerns when sanitizers are used above the recommended range. Person in charge (PIC) plans to switch to chlorine-based sanitizer until the quat dispenser can be serviced. A work order for the automatic dispenser was placed, at time of inspection. No dishes had been run yet today. Recommended staff use a sanitizing log to track sanitizer concentration. Correct By: Corrected At Time Of Inspection
