Observed several cheese setups, portioned cheese sauce with TCS and non-TCS toppings, cold holding in the top of the make-line refrigerator (not under time as control) with internal temperatures of 49-50F, probe thermometer, verified by person in charge (PIC). According to PIC, the cheese setups were placed into the make-line unit 5.5 hours prior to inspection. PIC voluntarily discarded, see embargo form. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.

2ND CONSECUTIVE VIOLATION Observed several covered containers of recently cut lettuce and tomatoes, cooling in the walk-in cooler. Discussed loosely covering TCS foods while in the cooling process to allow for airflow and rapid cooling to 41F. PIC loosely covered the containers. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
