Corrective Action: Corrected at time of inspection. Employee picked something up off the floor and continued food handling without washing hands, employee touched their clothing and face mask and continued food handling. Manager had employees wash hands and reviewed required hand washing with the employees. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks.

Blanched french fries stored on a speed rack in the kitchen, not in the walk-in, at 77*F to 98*F internally. Manager stated they had started cooking pans of the fries about three hours before and stacking pans on the rack, then finished cooking the last pans of the batch about an hour after starting . Embargoed. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. PRIORITY VIOLATION-3-501.14 - Priority: Cooling.
