Observed accumulation of debris in floor drains throughout establishment. Also observed build up of dust on hood above stove and fryer. Discussed conducting a deep clean and increasing cleaning frequency with PIC. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed several TCS food items missing date marks such as cut watermelon, opened packages of beef and chicken hot dogs, and small container of cooked chicken. Per person in charge, items were opened either yesterday or the day before. Discussed ensuring all staff is trained to date mark all RTE/TCS foods requiring date marking within 24 hours. All RTE/TCS foods were properly date marked at the time of inspection. Provided date marking handout. Corrective Action: Corrected at time of inspection.
