Observed missing cove base along parts of the wall below the sink. Also, exposed wood on two of the lower panels to the left of the sink. Discussed covering wood with FRP similar to the panel used below the sink. Corrective Action: Correct prior to next routine inspection.

Observed no hand soap available in the kitchen. PIC provided hand soap to properly wash hands. PIC reviewed the importance of hand washing with employee. Facilities must be maintained in a condition that promotes handwashing. Handwashing sinks must be maintained so accessible at all times, not used for other purposes than hand washing, and supplied with warm water, soap and paper towels. Corrective Action: Corrected at time of inspection.

Observed no paper towels available for hand washing. PIC provided paper napkins to dry hands. Discussed installing a dispenser on the wall or a countertop holder to store paper towels and keep accessible. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Corrected at time of inspection. 5-205.11 - Priority Foundation: Using a Handwashing Sink-Operation and Maintenance. Inspector's notes
Observed sour cream, butter and whipped cream stored in the reach-in refrigerator with an internal temperature of 55-57F, probe thermometer, verified by PIC. The back of the refrigerator was covered in ice; PIC discarded the TCS foods because the time spent in the danger zone was unknown, see embargo form. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
