Inspector's notes

Observed TCS food items 46*F-53*F in the main cold table including cooked potatoes, curry, cut tomatoes, cooked vegetables, tofu, and chicken at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC cold holding temperatures were checked when the establishment opened, less than 4 hours prior to the time of inspection. PIC discovered the unit had been turned up in temperature and turned the unit down at the time of inspection to rapidly cool TCS food to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed employee cleaning up spill off the floor in the dining area then without washing hands, changed tasks and begin preparing food items in the kitchen. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee was asked to properly wash hands at the time of inspection before continuing to work with food preparation. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed in the reach-in fridge toward the front of the kitchen holding deep fried vegetable pakoras at 50-55°F and whole milk at 45-50°F. The unit itself measured 57°F on a Cooper min-max thermometer. Per PIC the items had been in the fridge for less than an hour. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
