Observed salmon 45*F, tuna 44*F, ground yellowtail 45*F, ground spicy tuna 44*F, eel 46*F in the top of the cold table at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, TCS food items have been in the unit since the previous day. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed an ROP package of eel labeled "Keep Frozen" being thawed on the countertop at ambient temperature. Discussed with PIC that all ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. Had PIC remove eel from packaging and placed in a cold-holding unit to continue thawing. Corrective Action: Corrected at time of inspection.
