Notable areas include behind/underneath cooking equipment, ventilation hood, and inside the reach-in refrigerator near the entrance of the kitchen. The establishment shall clean the kitchen area at a frequency to prevent the accumulation of grease and food debris. Corrective Action: Correct prior to next routine inspection. 6-501.11 - Core: Repairing -Premises, Structures, Attachments, and Fixtures-Methods Addl Notes: Observed a hole in the wall underneath the 3-compartment sink. The establishment shall repair the hole in the wall in order to create a smooth, easily cleanable surface and to prevent the harborage of pests. Corrective Action: Correct prior to next routine inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed multiple Time/Temperature Control for Safety (TCS) food items located in a prep-top style refrigeration unit registering internal temperatures between 48°F-52°F. The perishable food items include cooked chorizo, corn, salsa, and raw-shelled eggs. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS food items were still within proper time/temperature control parameters. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection. The refrigeration unit registered an ambient air temperature of 48°F. The establishment has sufficient refrigeration to continue operating. Recommended owner contact repair services. Reviewed Time-As-A-Control procedures with owner as an alternative to cold-holding TCS foods at the prep line. *2nd repeat violation An Active Managerial Control (AMC) Intervention training was offered to, and accepted by, the owner. The AMC Intervention training is scheduled for Monday August 26th at 9:00 am.

Observed cooked chorizo, potatoes, ham, and cooked corn (elote) located in a refrigerator underneath the cold prep table registering internal temperatures ranging from 48°-52°F. Per manager, the food items had been in the refrigerator overnight. The establishment shall maintain cold food items at a temperature of 41° or below to prevent the growth of pathogenic bacteria. The manager voluntarily discarded the food items. The refrigeration unit measured 45°F using a min/max thermometer. The establishment has sufficient refrigeration to continue operating.
