Observed all TCS food items in the salad bar such as lettuce, salsa, chopped tomatoes, sour cream, ranch, and milk holding 52-64F. PIC said the unit was down and she had called for service today. PIC said staff had discarded all food items in the unit this morning and replaced the food recently. Discussed placing food on ice baths and moving larger items into working units. Also observed multiple food items in the walk-in refrigerator holding 52F. The unit had a fan that was not working. Inspector captured 44F on her min/max thermometer. The unit was most likely in a defrost cycle at the start of inspection. Discussed monitoring temperatures of food to ensure that the equipment is working properly. Discussed adjusting defrost cycles and leaving the freezer door open until the matter is addressed. PIC called for maintenance. ***1st repeat violation

Observed lunch meat, sausage, and TCS food items in a prep cooler on the assembly line holding 46-48F. The unit was holding 47F, captured using inspector's min/max thermometer. PIC moved the food items to a working unit. Also observed corned beef hash holding 70F inside a prep cooler. The cook said it had been sitting out to prepare orders. Discussed using an ice bath if left outside of temperature control. PIC moved it to the freezer for rapid cooling, as it had been taken out an hour prior. Also observed lettuce, tomatoes, and milk at 44-51F in the refrigerator used for assembling salads. PIC lowered the refrigeration temperature and cleaned the dust off the fan. Bags of ice were put over the lettuce and tomato and the milk products were moved to a freezer. Corrective Action: Corrected at time of inspection.

Observed cook grabbing burger patties, placing them on the grill, then proceeding to crack eggs and prepare dishes. Discussed when to wash with staff and cooking temperatures for ground beef (155F vs. eggs 145F). Hand washing must occur in between a change of task and when handling raw animal foods with different final cooking temperatures. Eggs may be pooled ahead of time in order to prevent physical cracking and contamination, or poly gloves may be used where hand washing would normally occur. Observed the refrigerator across the flat top grill holding 50F with the following food items out of temperature: chopped tomato, canned mushroom, chopped ham, sliced ham, sausage, chopped sausage, roast beef, ground beef, steak, corn beef hash, and French toast mix with egg. All items were holding 46-53F. PIC discarded all of the products besides the chopped tomatoes and sliced ham, as they had been put in the unit in the last hour. Also observed Romaine lettuce in an ice bath holding 70F. PIC stated the lettuce had been taken out of the fridge 20 minutes prior. Inspector discussed how to properly create an ice bath, by surrounding all containers with ice to the fill line. PIC switched out the lettuce with lettuce that was already 41F from the walk in refrigerator. TCS food items must be stored at 41F or below. ***REPEAT VIOLATION Corrective Action: Corrected at time of inspection.

Inspector lowered the temperature of the unit to 32F, and PIC covered the top portion of the unit to prevent the food from being exposed to air. The temperature dropped to 44F by the end of the inspection. PIC called for maintenance. Correct the following items prior to reinspection on 11/7/2023:1) Provide an NSF approved hand sink with hot and cold water that drains to a floor sink in the dish pit area. Discussed installing the hand sink next to the ice machine. 2) Remove the brass fitting downstream of the soda RPZ backflow device. All lines and fittings must be stainless steel, PEX or plastic. Test and certify the backflow device and provide the report. 3) Provide a dual check valve ASSE 1022 backflow preventer upstream of any non-carbonated equipment. 4) Provide a separate drain line for the prep sink and route it to the floor sink.5) Provide hose bibb vacuum breakers for each spigot (including the one under the buffet station).6) Ensure all drain lines going to a floor sink have a 1-inch air gap.7) Provide a hand sink in the expo area or limit this area to only pre-packaged items with no prep as discussed. 8) Replace all burnt out lights throughout the establishment.9) Fill in the gaps with grout in between the tiles throughout the kitchen.10) Grind down any concrete throughout the establishment that isn’t smooth. Apply a water bead sealant to the concrete. Water must completely bead up from the concrete. 11) Repair the air curtain to the back door. Provide a door sweep for the back door. 12) Provide cove base behind the dishwasher. 13) Add splash guards to the hand sink on the cook line. 14) Trim any foam throughout the establishment and provide a sealant or semi gloss paint over the foam (light in color).15) Finish repairing the finishes below the soda cabinet.
