There is inadequate hot water available at the new hand sink installed in the mechanical dishwasher area and the drain pipe runs along the floor to the floor sink. Repair the faucet on this sink so there is adequate hot water available. Also, properly mount the drain pipe off of the floor and provide a minimum 1 in. air-gap between the end of the drain pipe and the flood rim of the floor sink that it drains into. Provide a minimum 1 in. air-gap between the end of this pipe and the flood rim of the floor sink. This same correction must also be applied to the drain pipe for the food prep sink that extends into the floor sink adjacent to the ice machine. 2. All carpeting must be removed from these room and the floors must be finished to be smooth, non-absorbent and easily cleanable. 2. There are popcorn ceilings installed above the dishwasher, in the back utensil storage room and in the dry goods storage room. The ceilings in all these areas must be finished to be smooth, non-absorbent and easily cleanable. 3. The walls underneath the three compartment sink and around the adjacent utility sink are deteriorated with peeling and missing cove base. Provide a waterproof finish such as FRP to these walls and provide new cove base finish at the floor/wall junctures in these areas. 4. Repair the rough floor around the grease trap lid below the three compartment sink and the pit in the floor in the walk-way between the hood an walk-in unit to be smooth, non-absorbent and easily cleanable. PRIORITY VIOLATION-5-203.14, P: Backflow Prevention Device, When Required; 1. There is an old RO system installed at the hand sink in three compartment sink room without backflow protection. If this currently inoperable, RO system remains a certified, RPZ backflow prevention device must be installed upstream from the system and all piping and fittings on the downstream side of this device must be plastic or stainless steel, no copper or brass. Also, the faucet must be removed from the hand sink area. Removing the RO system entirely is an acceptable correction. PRIORITY VIOLATION-5-202.13, P: Backflow Prevention, Air Gap; 1.
