Observed staff handling dirty dishes handle clean dishes without first washing hands. Person in charge had employee take dishes and place on rack for washing and sanitizing. Employee maintained task of handling dirty dishes without switching tasks. Employee instructed to wash hands once task is completed. PRIORITY VIOLATION-2-301.14 - Priority: When to Wash. Regular shell eggs observed in the reach-in cooler. Breakfast menu offers eggs to order. Per PIC, over easy eggs are offered to residents, and getting pasteurized eggs has been a challenge due to shortages. NOTE; Highly susceptible population cannot be served un-pasteurized juices; pasteurized eggs and egg products are to be substituted for certain raw egg ingredients; no RTE (ready to eat) raw animal foods or foods containing raw or partially cooked animal foods or raw seed sprouts. Advised PIC to only offer eggs scrambled, boiled or fried (fully cooked) until they can get pasteurized eggs. Per PIC, the establishment will not offer over easy eggs except for when using pasteurized shell eggs. Corrective Action: Corrected at time of inspection.
