Inspector's notes

Observed RTE sandwiches, cheeses, and meats stored in a display cooler at 45-52F. PIC reports these items were just stocked in the wrong cooler and directed staff to relocate in proper cooler for rapid cooling. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed the ambient temperature of the dairy walk-in at 47.4, measured using min/max thermometer. The internal temperature of the milks ranged 51*F-52*F. PIC informed that the milk had been in the unit since the day prior. Informed PIC that due to them being in the cooler for more than four hours to milk needs to be discarded. PIC pulled all the milks from the shelves and removed the stocked product from the unit. Milk was discarded at time of inspection. Milk was embargoed. Instructed PIC to not use the walk-in for TCS product until it is capable of holding TCS product at 41*F or below. PIC agreed to not use the unit until it can hold TCS products at 41*F or below. PIC called in the repair at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
