Observed employee washing dishes at three compartment sink in coffee shop and dunking dishes in quat sanitizer for less than 10 seconds and then rinsing off sanitizer water before placing dishes on drying rack. Discussed with employee and PIC that dishes must be allowed to soak in quat sanitizer for 30-60seconds (or per manufacturers inspections) for full and proper sanitation. Employee re-sanitized dishes at time of inspection. Discussed with PIC that dishes must be fully dry before making food as to prevent potential residual chemical from getting into food.
