In the tea room, knives and utensils were found inside the hand sink basin along with dish soap and a sponge. Inspector moved the items and discussed hand sink use with the PIC along with the importance of using a 3 compartment sink and completing all steps such as wash, rinse, and sanitize. Observed the metal blade slicer with visible TCS food debris on it. PIC moved the slicer to the dish machine to be cleaned. Core-6-501.112, C: Removing Dead or Trapped Birds, Insects, Rodents and other Pest Observed rodent droppings throughout the establishment on the floors, on top of backup plates used for large events, and other dry storage areas. Operator provided an invoice from the last pest control service done on 9/7. The kitchen was treated for rodents and bait stations were set up. Operator provided invoices showing routine service done twice per month. Discussed cleaning any droppings to prevent contamination, and covering exposed areas until the issue has been resolved. Also observed 4 fly tapes hanging from the ceiling in the kitchen with multiple flies on them. PIC removed the tape, as they were within food prep areas and areas in which food and plates are being transported. Correct By: Correct Prior To Next Routine Inspection
