Observed dumped coffee in handwashing sink located opposite of walk-in. Reviewed with PIC and staff that handwashing sinks shall be used for only handwashing. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. Repeat Violation PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding.---Observed cows milk and an opened container of salsa (tomato) in the reach in cooler having internal temperatures of 45-51*F. Person in charge states these food items came from the walk in cooler 2 hours prior to inspection and were moved back to cool down. Unit ambient temperature measured at 45*F but was observed to be under 41*F by the end of the inspection. Discussed the importance of knowing when all cold holding units go through their defrost cycles and to make sure it occurs during non operation hours to prevent the temperatures from rising rapidly. Also discussed how all time/temperature control for safety (TCS) foods that are cold held must keep an internal temperature of 41*F or below to prevent bacterial growth.
