Inspector's notes

Observed active warewashing at chemical dishwashing machine located in warewashing area with chlorine sanitizer concentration of 0ppm. PIC stated low temp chemical dishwashing machine in question has been in disrepair and has an active work order placed to be repaired within the week. Establishment observed equipped with 3-compartment sink with quat dispenser callibrated at 200ppm. PIC agreed to not use chemical warewashing machine until it has been fixed. All sanitization of food contact surfaces and equipment shall be done at 3-comp sink using quat dispenser; until warewashing machine has been fixed. Food-contact surfaces must be properly sanitized after washing and rinsing. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Cooked sausage was in the appropriate cooling time/temperature at the time of inspection. Person in charge uncovered the cooked sausage to cool properly. Discussed the importance of using appropriate cooling methods such as using ice wands for big batches of food, cooling in shallow pans no more than 4 inches deep, and left uncovered so that hot air is not trapped to prevent the growth of bacteria.
