Observed assorted TCS foods in the walk-in cooler such as sandwiches, sushi, cheese, noodles, hummus, raw eggs and potato salad with internal temperatures between 46-48°F. Minimum temperature on the far side of the walk-in cooler near the freezer entrance measured at 46°F with/min max thermometer.

PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. It was determined that the circulating fan was turned off in the walk in cooler when staff was restocking which contributed to temperatures above 41°F in the far side of the walk-in cooler. According to the person in charge all TCS foods were within safe time parameters. The circulating fan was turned back on and all TCS foods were moved near the walk-in entrance which maintains 37.7°F according to inspector’s min/ max thermometer. Discussed maintaining 41°F or less in any cold holding units used to store TCS foods.
