Main kitchen services both independent living (IL) and assisted living (AL). Advised person in charge (PIC) that when serving a HSP (Highly Susceptible Population) only pasteurized eggs must be used, except when baking or hard-boiling. The PIC stated the unpasteurized eggs are being used for breakfast due to egg shortage and egg of choice options are all fully cooked for AL or used for baking purposes. The consumer advisory notification is listed on the menu for IL residents that may request raw/undercooked animal foods.

Remodel underway to replace cooking hood, ac ventilation t-grid celling, LED lights in kitchen. Requested expedited submittals for major remodel for the main kitchen and expedited minor remodel for mobile trailer extension of premises.Mobile kitchen is utilizing permanent power via generator tied into the facilities power, temporary gray water (300 gallon) tote serviced every other day by United Site Services. Requested the tote be relocated to west side of mobile trailer to facilitate drainage. Replace garden water hose with food grade hose for water supply from building with a hose bib vacuum breaker.Due to the violations noted on this inspection report, County legal action may result from this inspection.Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. Upon arrival, observed majority of kitchen inoperable for food service due to a major remodel. The establishment has removed all major equipment (vent hoods, fryers, stoves, ovens, etc.) and has a temporary mobile food unit set up for service. The walk-in refrigerator and freezers in main kitchen are still in use. No major or minor remodeling permit(s) on file at the time of inspection. No food establishment shall be constructed, nor shall any major alteration or addition be made until detailed plans and specifications for the premises have been submitted to and approved by the Department; nor shall any construction, alteration, or addition be made except in accordance with approved plans and specifications. The owner, operator, or their authorized agent shall certify in writing that the plan documents comply with these regulations. Ch. I Reg. 4a - You are operating without the required permit and/or approval from this Department.Discussed with management applying for the following permits to be in compliance with MCESD:1.) This establishment received a(n) C Grade and had 2 Priority, 1 Priority Foundation violations on this inspection.Upon arrival, Chef immediately disclosed that the middle walk-in refrigerator was above 41 degrees F, and they were in the process of discarding all of the food in the refrigerator. Ambient temperature of walk-in refrigerator was 61 degrees F using min/max thermometer. Kitchen has two other walk-in refrigerators, and a walk-in freezer that were keeping foods below 41 degrees F.
