Inspector's notes

-- Chlorine concentration levels undetectable on dishes in low temp/sanitizing dishwasher. The PIC primed the sanitizer and reran the dishwasher. After priming and rerunning, the concentration levels measured between 50ppm-100ppm. Ensure employees are monitoring detergent/sanitizers levels, replacing containers when empty, and utilizing test strips to verify dishes are getting properly cleaned and sanitized. Corrective Action: Corrected at time of inspection.

Advised person in charge (PIC) that when serving a HSP (Highly Susceptible Population) only pasteurized eggs must be used, except when baking or hard-boiling. The PIC stated the unpasteurized eggs are being used for breakfast due to egg shortage and egg of choice options are all fully cooked only for AL residents.
