All items in walk-in refrigerator (Spaghetti, cooked zucchini, ricotta, tomato sauce, fruit salad w/melon, cheeses, deli meats, etc) with an internal temperature of 45-50*F. Person in charge mentioned foods had an internal temperature of 41*F within 4hrs prior to inspection and provided temperature logs of temperatures at 37*F. All cold temperature-controlled foods should be held at 41*F or below. Person in charge placed foods in freezer. Foods reached an internal temperature of 44-47*F within 45min and going down. Recommended increasing temperature monitoring. PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Walk in refrigerator with an ambient temperature of 47*F. Refrigerators should be held at a temperature of 41*F to hold temperature-controlled foods. Employee mentioned they put in a service request and will be serviced tomorrow. Owner to provide work order invoice once completed. Re-Inspection to occur by 3/30/2026. Person in charge opened adjoining freezer creating an ambient temperature of 41*F and below. No temperature-controlled foods to be held in unit if unit unable hold an ambient temperature of 41*F or below. All foods to be held in neighboring walk-in at 41*F. 4-301.11 - Priority Foundation: Cooling, Heating, and Holding Capacities-Equipment.
