Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. According to the PIC the yogurt was placed in the unit shortly after 10AM. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Discussed filling upper section of the prep refrigerator with pans to maintain proper cold holding temperatures. Corrective Action: Corrected at time of inspection. Repeat Violation: 2nd.

Observed high temp dish machine that measured 130.5*F with inspector min/max thermometer. Person in charge (PIC) spoke to maintenance and they said that the machine was set up for chlorine sanitizer as well. Tested machine again with chlorine test strips and it measured 0ppm. PIC instructed staff to use 3 compartment sink until the machine can be fixed. Discussed with PIC that all dishes and utensils must be washed rinsed and sanitized with either the proper temperature reading of 160*F at final rinse or the proper chemical sanitizer reading of 50-100 ppm (if used as a low temp/sanitizer machine).
