Discussed with Chef that when cooling, proper methods include: Placing food in shallow pans, separating the food into smaller or thinner portions, using rapid cooling equipment (i.e. a blast chiller), stirring the food in a container placed in an ice water bath, using containers that facilitate heat transfer, or adding ice as an ingredient. Observed high temp dish machine that measured 109*F with inspector min/max thermometer. PIC spoke to maintenance and they said that the machine was set up for chlorine sanitizer as well. Tested machine again with chlorine test strips and it measured 0ppm. PIC instructed staff to use 3 compartment sink until the machine can be fixed. Discussed with PIC that all dishes and utensils must be washed rinsed and sanitized with either the proper temperature reading of 160*F at final rinse or the proper chemical sanitizer reading of 50-100 ppm (if used as a low temp/sanitizer machine).
