Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Person in charge (PIC) directed employee to clean the area during the inspection to correct. Corrective Action: Corrected at time of inspection.

Also observed dispenser unit with LCD display set to 98.8'F. Per PIC, items were reheated and placed in the containers less than 2 hour prior to inspection. Both items were reheated to 165'F at the time of the inspection. Discussed proper hot holding with the PIC. All food held hot must be maintained at 135'F or above at alltimes.
