The person in charge stated the raw meats in the meat case had been brought out from the walk-in cooler and had been stored for cold holding more than 4 hours ago. The person in charge stated the raw meats in the walk-in cooler were from a recent delivery less than 2 hours ago. The person in charge moved the recently delivered meat to alternate cold holding equipment off site.
