Instructed PIC when walk in reaches ambient temperature of 41 degrees to call MCESD to have the re-inspection occur before the deadline date.
Inspector's notes
Observed walk in cooler not reaching proper cold holding temperatures, inspectors min max thermometer registered 53 degrees. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. During the visit, facility's holding TCS products in a small two door reach in. No TCS items are being stored in the walk in until repair is complete. PIC stated that the walk in was down for a week and stated that the unit has already been fixed yesterday at 2pm and that they were waiting for the walk in to reach the required 41°F or below. Corrective Action: Correct prior to re-inspection.
