Observed deep container of chicken in the walkin with a lid on it, at 60F, manager said it has been cooling for 3 hours. Talked to staff about cooling techniques. Ensure that cooling foods are in shallow pans, with no lid while cooling. Manager chose to embargo foods during inspection.

Core-2-102.12(A), C: Certified Food Protection Manager ------ No certified food protection manager certificate available on site. The manager stated they are in the process of taking the exam. Establishment has two other CFMs who were not onsite at the time of inspection. Discussed that a CFM must always be available onsite to answer food safety questions for employees. Discussed that an additional CFM may be required to ensure a CFM is always available. Discussed that a temperature measuring device is required to ensure sanitizing temps are being reached inside the dish machine (160*F per data plate on the dish machine). Discussed obtaining a min/max thermometer or temperature stickers and checking regularly to ensure normal operation. Discussed obtaining chlorine test strips before re-inspection on 5/10/2024. PRIORITY VIOLATION-5-202.11 (A), P: Approved System ------ No airgap observed on the soap and sanitizer dispenser without benefit of a backflow or physical air gap. PIC stated the dispensers were changed approximately 2 months prior. An approved 1055A backflow prevention device must be installed to all chemical dispensers throughout establishment prior to reinspection on 5/10/2024.
