Repeat Violation Core-3-304.12 , C: In-Use Utensils, Between-Use Storage---Observed at kitchen area, rice scoops and other kitchen utensil left sitting in water that was not at 135*F or hotter. PIC placed the utensils inside a dry clean container at time of inspection. Based on the type of operation, there are a number of methods available for storage of in-use utensils during pauses in food preparation or dispensing, such as in the food, clean and protected, or under running water to prevent bacterial growth.
