**Discussed with the PIC about ensuring that employees are properly washing hands and not contaminating gloves by blowing into them. Multiuse gloves, especially when used repeatedly and soiled, can become breeding grounds for pathogens that could be transferred to food. Hands must be washed before donning gloves. Keep PHF/TCS foods in cold holding at 41F or below. *Ambient temperature of the salad bar/make line unit was 50F. The unit was accidentally not turned on at time of inspection. PIC stated that all items had been placed into the unit within the last thee hours and relocated to the walk in freezer to rapidly cool. *(Temps had dropped about 3 degrees after twenty minutes.) Keep PHF/TCS in cold holding at 41F or below. *Ambient temperature of the reach in cooler was 48-52F. PIC removed all food items from the unit and stated that the unit would not be used until it is maintaining 41F or below. Establishment has sufficient refrigeration.
