Observed imitation crab mix in four small ceramic cups with plastic cling wrap covering them located in cold holding unit between 49*F and 51*F. Per PIC, imitation crab mix was prepared approximately an hour ago. Imitation crab mix in cups were uncovered and moved to facility walk-in to rapidly cool. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
