Rice Pilaf-99-105F cooling in a tightly covered container in the walk in cooler. The PIC stated that the rice began cooling about two hours prior and voluntarily discarded-see embargo form. Ensure that PHF/TCS foods are cooled within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F to 41°F or less. Corrective Action: Corrected at time of inspection.

Multiple opened/prepared food items including salads, cut melon, corn, and meatloaf date marked for use within 8 days. All items were still within the 7 day time frame and the PIC stated that the use by dates would be corrected. TCS food should be clearly marked to indicate the date or day the food shall be consumed on premises, sold, or discarded when held at a temperature of 41°F or less for a maximum of 7 days. Lactic -acid sanitizer (Smart Power) in three compartment sink and in multiple sanitizer buckets at 848-1130 ppm. PIC called the chemical company to adjust the sanitizer to proper concentration and stated that water would be added to dilute the sanitizer. Ensure that lactic acid sanitizer is at proper concentration of 272-700-ppm when used on food contact surfaces and/or according to manufacturer’s directions.
