Inspector's notes

Observed cheeseburgers, chicken sandwiches, burritos, breakfast sandwiches, omelets, and turkey sandwiches with internal temperatures of 64*F - 66*F using probe thermometer. The cold-holding unit was blowing air with a temperature of 59*F - 62*F using laser thermometer. The analog thermometer on the unit read 59*F. The food was placed in the unit around 6:30am in the morning, about 8-hour before start of inspection. Discussed with person in charge (PIC) that the Time/Temp Control for Safety Food (TCS) needs to maintain a temperature of 41*F or lower. PIC voluntarily discarded food at time of inspection. Establishment shall not use this cold-holding unit for TCS food until the unit has been repaired. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
