Inspector's notes

Observed TCS foods in salad prep fridge have an internal temperature above 41*F, person in charge (PIC) stated all items in unit were put in at 8am. TCS foods out of temperature include lettuce mix (53*F) stored on the top and lettuce stored on the bottom (48*F), sour cream stored on the top (53*F) and sour cream stored on the bottom (47*F), cut tomatoes (53*F). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were out on ice to rapidly cool to 41°F at time of inspection. Establishment will use ice or time as a control until unit is functioning properly. #22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Blue cheese, shredded cheddar, guacamole with diced tomato, and uncooked hashbrown in top portion of center prep cooler found with internal temperatures of 47-52*F. These items were on the front edge of the cooler and were the only items with elevated temperatures of 41*F or above. The cooler was providing an ambient of 41*F or below. PIC stated they had been there since last night and nobody had checked the temperature of those items today. The items may have been elevated in temperature due to proximity to the stove. The hashbrowns were also double panned which may have contributed to the elevated temperature. PIC discarded the items. The cooler to the West of the center cooler had cut lettuce and crepes with internal temperatures of 47-51*F. The lettuce was placed in the container in a manner that had about a third of the lettuce above the rim of the container. Only the top portion of the lettuce was above 41*F while the lower portion was still below 41*F. The crepes were on a plate placed on top of the other food containers which caused them to be elevated in temperature. PIC stated both the lettuce and crepes were placed in the cooler within the last 30 minutes and moved them to the bottom portion of the cooler for cooling and continued cold holding. Please ensure cold held TCS food items are maintained at 41*F or below. ***2nd consecutive violation*** Corrective Action: Corrected at time of inspection.

Hard boiled eggs, hash browns, sliced avocado, in top portion of prep cooler found with internal temperatures of 49-50*F. PIC was aware the cooler was not working and some other items in the cooler were either on ice or recently placed in the cooler and still cold from previous coolers. PIC stated the above mentioned items had been in the cooler since around 6:00 AM today and discarded them. The other items were moved to alternate coolers or placed in ice baths. Repair technician onsite said the cooler will not be able to repaired today. The cooler will not be used for cold holding TCS food items without the aid of an ice bath until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below. Please ensure cold held TCS food items are maintained at 41*F or below. Corrective Action: Corrected at time of inspection.
