Inspector's notes

Observed that the sanitizer at three compartment sink was only reading at 100 ppm Quaternary sanitizer must be between 150 - 400 ppm. Sanitizer distribution may have leak causing lower concentration to be mixed. Staff must manually put sanitizer into for washing dishes and wiping cloths. Advised staff to check chemical sanitizer level with test strips. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed tuna salad in sandwich prep cooler with a date marked 1/14-1/21. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Advised person in charge to check date marks on a daily basis. Tuna salad was embargoed and discarded. Corrective Action: Corrected at time of inspection.
