Per manager, repair services visited yesterday after time of inspection. Repair services found a leak in the A/C unit, repaired it, and refilled system with Freon. Both ambient air temperature and internal temperature of TCS products in walk-in dairy cooler registered within acceptable ranges.

Inspector's notes

Upon entering the dairy walk-in cooler, observed half of the walk-in (furthest from door) unit's ambient air temperature holding at 49°F. Took internal temperatures of 2 different milk cartons. Both registered between 48°-49°F with a probing thermometer. Per store manager, the refrigeration at this unit has been an issue and has A/C services out to the store the day prior to inspection. Per manager, the unit was holding at proper temperatures a few hours prior to time of observation. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The half of the walk-in unit closest to the door was holding an ambient air temperature of 42°F. Instructed manager to move backstock of dairy cooler to colder half of the unit and minimally stock shelves on warmer side. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed dairy walk-in cooler unable to maintain proper cold-holding temperatures for dairy products. The ambient temperature of the walk-in unit registered between 42°-49°F with a min/max thermometer. Manager placed an emergency work order and contacted district management to expedite repair service visit. The establishment shall repair the walk-in cooler by reinspection tomorrow afternoon. Corrective Action: Correct prior to re-inspection. *24-Hour Reinspection*
