Last date of sale not written on previous shell stock tags. PIC stated that the meat counter associates would write the date on the tags. A re-inspection will be conducted within 10 days to ensure dates are written on the shell stock tags when the last shell stock is sold. Shellstock tags must be kept with shellstock until sold, dated with final sale date, and maintained in chronological order for 90 days onsite. Corrective Action: Correct prior to re-inspection.
