Observed orange matter built up on three metal carts in the cooler room near where meat is aged. Establishment to clean the rust with warm soapy water and seal surfaces with a food-safe semi-gloss paint or another approved sealant. Establishment to repair the metal carts before the next routine inspection. Discussed cleaning requirements with staff. Corrective Action: Correct prior to next routine inspection.
