Observed raw oysters in the walk-in cooler without a shell stock tag. PIC stated that they did not have the shell stock tags on hand but did have an invoice. Oysters were voluntarily discarded by PIC. Shellstock tags must be kept with shellstock until sold, dated with final sale date, and maintained in chronological order for 90 days onsite. Corrective Action: Corrected at time of inspection.
