Observed various raw salmon stored in vacuum bags in prep top cooler in kitchen area. Items were voluntarily discarded or removed from packaging at time. Please ensure a variance is obtained for reduced oxygen packaging of food items for extension of shelf life. A variance/HACCP must be obtained prior to conducting any specialized processes. Observed 0 ppm chlorine sanitizer in the dish machine. The machine is meant to be hi temperature and is unable to be primed. Chlorine sanitizer should be between 50-100 ppm to ensure the dishes are properly sanitized. The PIC set up the 3-compartment sink until the unit can be serviced by a technician. Corrective Action: Corrected at time of inspection.
