Items were voluntarily discarded or removed from packaging at time. Please ensure a variance is obtained for reduced oxygen packaging of food items for extension of shelf life. A variance/HACCP must be obtained prior to conducting any specialized processes. Observed multiple large covered containers of black beans in walk-in cooler which measured 92 degrees F. Person in charge said they had been cooked nearly 2 hours prior. Items were moved to shallow pans and put into blast chiller at time. Please ensure food items are cooled in shallow, uncovered containers until they reach 41 degrees F. Corrective Action: Corrected at time of inspection.
