Inspector's notes

Observed sanitizer bucket in the sink at the time of inspection, blocking use of the sink. PIC relocated all items blocking handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed carnitas at 118*F in the hot holding well. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. PIC stated TCS food items were placed for hot holding within the last hour. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed TCS cut tomatoes 47*F, cut lettuce 68*F, shredded cheddar cheese 64*F in cold holding table. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC stated TCS food items were placed in the unit less than an hour prior and noticed employee forgot to turn cold holding unit on. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. PIC turned unit on and allowed cold holding unit to come down to 41*F or less to add TCS food items back in. Corrective Action: Corrected at time of inspection.
