Observed employee washing equipment, and putting them away to air dry without sanitizing them. The sanitizer basin was holding <10ppm chlorine concentration. Trained staff in English and Spanish on how to properly wash, rinse, and sanitize.

Observed bread stuffed with cheese and jalapeno at 77F in the bakery case. A time stamp was on the tray with the "in" time only. PIC did not have a policy to present to the inspector for the bread. The bread had finished baking an hour prior per PIC. A policy was created with the PIC. Corrective Action: Corrected at time of inspection.
